Ingredients
1 cup Rice
1/3 cup Soy sauce
2 cups Water
1/3 cup Honey
1 tbsp Vegetable oil
500g Chicken breast or thigh fillets, cut into strips
1 Large carrot, thinly sliced
2 cups Snow peas, halved
1 Red capsicum, cut into strips
4 Green onions, sliced, plus extra to serve
3 cloves Garlic, crushed
Steps
- Add soy sauce, honey and half the garlic and stir to combine. Add chicken.
- Boil water in a poot, add washed rice. Cook for 12ish minutes, remove from heat and cover with lid so the rice can absorb any remaining water.
- Meanwhile, heat oil in a large non-stick frying pan or wok over a high heat. Add garlic until fragrant then add carrot, and capsicum coo until softened. Add snow peas for another 2-4 minutes. Remove vegetables and cover. Add chicken to the wok or pan, cook in batches if needed, when chicken is cooked add back the vegetables and any remaining honey soy sauce.
Serve with rice and garnish with extra green onions.
